BREATHE
Close your eyes. Take three deep, ujjayi breaths. Listen to the space between thought and prepare your palate to experience chocolate.
SEE
Describe what you see. What is the shape, color, sheen and texture?
TOUCH
Run your finger against the chocolate, noticing its texture and releasing the aromatics.
SMELL
Bring the chocolate to your nose. Close your eyes, cup your hand around the chocolate and inhale deeply.
TASTE
Enjoy your haut-chocolat in two bites. In the first bite, you are just getting to know the haut-chocolat, and in the second, you delve deeper, searching out the aromas and nuances. You become immersed in the experience of the chocolate and the sensations. After you’ve eaten the haut-chocolat, take a breath and taste the air. The aroma should have a long, lingering finish that is layered with perfumed notes.

When entertaining, it's always nice to have an element of surprise and pull out some secret weapons that really elevate the experience for your guests. Cheese and chocolate pairings do just that. These are two fermented foods that are truly meant to be paired together. I always have a fully stocked pantry filled with my favorite crackers, a library of exotic chocolate bars, an ice box filled with truffle collections and a great set of liquors. This set up allows me to be quick and ready to entertain whenever the mood strikes or the doorbell rings.

Pink Peppercorns
BrazilThe sweet and spicy flavor has become a recent favorite of chefs all over the world. Its taste is often described as fruity, making it a wonderful complement for fruit sauces, vinaigrettes, and even desserts. It has also been used as an ingredient in some Chilean wines, and as a flavoring in syrups. The pink peppercorn comes from a sprawling shrub that can grow quite large if the conditions are optimal. It has vine-like branches with small white flowers and small pinkish-red berries.

I haven’t had a bad VHC chocolate yet!
I always enjoyed the manchego & cherry but I prefer a darker chocolate. This one not only has the most perfect chocolate flavor but the depth and complexity of other ingredients. I try to savor chocolate slowly but I eat this bar too fast. It’s TOO good.
A new favorite!
This bar is pretty good. There’s a hint of salty Parmesan flavor along with the fig and tiny pieces of walnuts.
Absolutely loved it. It was a delightful combination I have never tried before and now I’m hooked.
