Each Vosges Haut-Chocolat collection is packed fresh on your day of shipment. Truffle collections are shipped from frozen, then thaw while in transit, and are perfectly safe to refreeze upon arrival. A How to Care card is included in each shipment, featuring details on the collection and tips for enjoying your haut-chocolat. Please rest assured that once thawed, chocolates will be fresh for up to 7 days before needing to be placed in the freezer.

Sweet and savory, reinterpreted. Follow our guided tasting notes to best enjoy the iconic Rooster truffle. A cult favorite made with Emilio Mauri's Taleggio, a cave-aged cow's milk cheese from Pasturo in the Lombardi region of Italy, this unctuous cheese is combined with organic walnuts and Tahitian vanilla beans draped in 62% cacao dark chocolate. The combination of cheese and chocolate may seem acerbic and perplexing, but in one bite, you will see its valor.
To begin, close your eyes. Take three deep, ujjayi breaths.
1. START FROM THE TOP
Bite into the crowning tip of the chocolate. Hold the chocolate on your tongue and press it to the roof of your mouth. Feel it melt bittersweetly around your tongue. Begin to eat and you will introduce your senses to the Taleggio cheese and a nuance of vanilla.
2. INTRIGUE FOLLOWS
The second bite brings you deeper into the parfums -the rich, creamy texture of the cheese dotted with a crunch of toasted walnuts. The aroma is steeped with a thousand harmonious complexities. Salt hits the palate, meeting the sweetness of the chocolate in perfect marriage.

ItalyAged in the caves of Pasturo, Emilio Mauri's Taleggio cheese from the Lombardy region of Italy is known for its strong perfume and mild, fruity flavor. Taleggio is a brine-washed cow’s milk cheese that is cave-ripened in northern Italy and becomes soft and pungent as it ages.

I much prefer the milk over the dark, but I’ve slanted to try the Rooster.,the combination of dark and the cheese took all the bitterness out of the dark chocolate and it melded perfectly. I can’t wait for my next order.
The truffles are all so pretty, it made for a great gift!
Most of them were really good, not a fan of the fennel one at all, but the others were solid
