Chocolate Bar Pancakes
Ingredients:
- 2 cups white whole wheat flour
- 2 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 2 eggs
- ½ cup unsweetened applesauce
- 1 ¼ cups milk (whole milk works best)
- 2 tbsp honey
- 1 tsp vanilla extract
- 2 tbsp unsalted butter (melted)
- 1-2 3oz Mo’s Dark Bacon Chocolate Bars (depending on how much chocolate you want in the mix)
Chop Mo’s Dark Bacon Chocolate Bar(s) into small squares. Set aside.
In a large bowl, whisk together white whole wheat flour, baking powder, baking soda, and salt.
In a separate bowl, combine eggs, applesauce, milk, honey, and vanilla. Whisk until smooth. Whisk in melted butter. The batter should be thick but, avoid adding more milk as that will flatten your pancakes when cooked.
Pour the wet ingredients into your dry ingredients and whisk until just incorporated. It’s okay if a few clumps remain. Gently mix in chopped Mo’s Dark Bacon bar(s) until incorporated throughout the mix evenly.
Heat a skillet or griddle over medium heat. Spray with cooking spray. Scoop ¼ cup batter onto the heated griddle. Cook until you see bubbles form (about 2-3 minutes) and flip. Cook for a remaining 2-3 minutes. Cook in small batches until batter is gone.
