The Zion collection was created in celebration of the island of Jamaica, its fascinating blend of cultures, Rastafarianism and reggae. Jamaican inhabitants came from around the globe, bringing with them cooking techniques, flavors and the spices of their homelands. Blending this with the bountiful harvest of the tropical island brought forth some of the most flavorful cuisine in the Caribbean. These are the flavors which inspire the Zion collection… Jamaican allspice, with its essence of cinnamon, nutmeg and clove, is used in jerk seasonings, sauces and curries. The sorrel flower, brought from India, blooms in December in deep red shades. This 'flor de Jamaica' makes their traditional holiday beverage and is slightly tart in flavor. Appleton Rum, the world's oldest rum, has always been a key part of Jamaican culture. Its influences flow powerfully through traditional Jamaican medicine, ritual and everyday life. Sugarcane, from acres of fields that lie in the shadows of the great Blue Mountains. The flavors of this collection are each reminiscent of the many sacred treasures the island has to offer.

Rasta - Jamaican sorrel + fresh ginger + nutmeg + mango + white chocolate + hibiscus flower The Rastafarian movement was born in Jamaica in 1930 with the news of the crowning of Ras Tafari, Haile Selassie as the King of Ethiopia. The Rastafarian religion is loosely organized but adheres to basic life principles expressed through natural and positive means. Rastafarians live off the land and are mostly vegetarians, wear their hair in dreadlocks and speak in a language tailored for unique self expression, modified to highlight the positive. Lion - calabaza (a sweet, pumpkin like squash) + allspice berry + dark chocolate + organic pumpkin seed Haile Selassie hailed from Ethiopia and was considered to be the messiah sent to liberate the Black people. For this reason, Ethiopia is viewed by many Rastas as the promised land of Zion, where Black people exiled from Western countries can return to this homeland. Rastas believe they are the lost tribe of the 12 descendants of Israel.

Kaya -hemp seed nuts + milk chocolate Ganga, collie, or kaya: a holy herb given to the Rastafarian people to help pass the time in Babylon until they are able to reach Zion. Hemp seeds, originating from the ganga tree, are filled with antioxidants and provide many essential fatty acids. These seeds are one of the oldest foods known to mankind.

"I-tal" is Rastafarian for "Vital." In the Rastafarian language the letter "I" is of utmost importance; it often replaces the first syllable of valued words, such as "I-manity" (humanity). Another widely used term is "I and I," referring both to oneself and to the divinity of God (Jah) carried within the individual. Thus "I and I" represents both a person's individuality and the importance of Jah.
