How to eat a truffle

"I always suggest bringing the truffles to room temperature in order to experience the subtle nuances of the chocolate, spice, flower, root, herb and/or liqueur present in the truffle."

first read the story. This sets the stage. It allows you to paint a picture through your imagination; to conjure up an expectation as to how the chocolate will taste and to where you will transcend.

see there should be a glossy shine to the truffle demonstrating a good temper (a tight bond between the cocoa butter and the cacao mass).

lick the spice from the top of the truffle. This will give you a hint of what is to come...tease the palate.

touch. How does the texture feel on your fingers?

snap. Chocolate should always be dry to the touch. If chocolate is stored at ideal conditions, when you take a bite you should hear the crisp snap of the chocolate breaking to reveal the creamy ganache inside.

taste. Taste each truffle in at least 2 bites. In the first bite you are observe your first impression. In the second bite you delve deeper, searching out the particular flavors and nuances. You become immersed in the experience of the chocolate, your mouth and the sensations. The taste should have a long, lingering finish that is layered with perfumed flavor notes.
