"In the past, I was silenced for even suggesting a Cabernet Sauvignon was a suitable pairing with dark chocolate, though I was convinced the duo was divine. So I insisted and matched each truffle collection to one of my favorite wines, synchronizing origins and complementary flavor notes in the wine and chocolate. I love the Budapest truffle (sweet Hungarian paprika) and the Chef Pascal truffle (kirsch + dried Michigan cherry) with this wine. The fruit forward wine makes the cherry notes of the Chef Pascal pop; the paprika in the Budapest truffle draws out the wine's peppery flavors.

Australia is dominated by two red varietals: Cabernet Sauvignon and Shiraz (The Syrah grape is referred to as "Shiraz" when grown in Australia and South Africa). In terms of overall grape production, a whopping 95% are planted in the cooler southeast corner of the country. Shiraz in particular thrives here, and the grapes continue to ripen before harvest to reveal seductive, jammy, full-bodied wines with loads of personality, packed with fruit flavors.

Two Hands Angels Share Shiraz is a deep red-purple hue with aromas of spice, espresso, chocolate and cherries dominating the nose. On the palate the wine coats the tongue with black currant, bilberry, violet, licorice and pepper notes. The wine is named after "Angels Share," and ode to a legend. It has been said angels watched over the production of wine during Medieval times, taking just a bit to the heavens, the "angels share," as the wine matured. Pessimists might contradict the fable with fact— it is natural for a small amount of wine to evaporate from the oak barrels during aging…but once you taste this magical wine you might just believe in the power of the tale.
